The fan needs to be able to cope with the amount of steam released when cooking and extract it through the filters or ducts. The more hobs you have on your stove, the more you will want the fans to cope with the steam released from the pots and pans. The higher the CFM, the better.

Unfortunately you need to think about the noise the motor releases when in use. Most manufacturers boast about how powerful their motors are, but they leave out how noisy these motors are. If the motor is too noisy you cant have a conversation in the kitchen while you are cooking. It is also annoying for the rest of the family if you have an open planned kitchen that joins the living room or dining room.
