Celebrate Your New Kitchen With A Dinner Party

You have just had your new kitchen installed. It looks amazing and all the hard work is done so now its time to throw a party and celebrate!

This is an excellent recipe for an informal dinner party, and the rich colours look great on a plate. Serves 4

Make a basic tomato sauce, using 1 or 2 crushed garlic cloves, 2 tins of chopped tomatoes, one small finely chopped onion, some fresh or dried basil, a teaspoon of sugar and a dash of wine vinegar.

Simmer all these ingredients together and season with pepper to taste.You can also add a dash of Worcester sauce if you have any in your cupboard. Allow all to reduce slightly till starts to resemble a thick sauce.

Preheat your oven to 190c/ 170c if fan assisted/ or Gas 5.

Wilt 2 bags of baby spinach in some olive oil over a low heat and then add 2 tubs of ricotta cheese, some black pepper and a pinch of nutmeg. This may seem like a lot of spinach, but it soon reduces.

Lightly grease an ovenproof dish and add half of the tomato mixture. Then add a layer of lasagne sheets, fresh or the type that require no precooking, and top with some of the ricotta mixture. Continue layering lasagne and ricotta, before finishing with a layer of tomato sauce. Top with grated cheese and bake for around 40 minutes until the top is bubbling and golden.

Serve with a fresh green salad and a good Rioja wine.

Exra tip; Try adding chopped fresh parsley to your green salad for extra flavour.
