Spread it onto large flour tortillas, roll them up and slice into individual bites. The tortillas can be spinach or tomato flavored or just plain, which varies the colors of the rolls.

When making a cheese ball, you want the ingredients to be dry enough to stay together, but other additions can be made if you are using the mixture for tortilla roll ups. Vary the cheese. Cream cheese softens nicely and makes a great base, but another cheese will vary flavors significantly. Use a log of soft goat cheese, or blue cheese as variations. Add vegetables like finely chopped cucumber, or shredded carrot.

Adding Chopped Rotisserie Chicken

Rotisserie chickens are a great help in any quick planning. Chop some of the rotisserie chicken and add to the cheese mixture. One cheese ball combination could be 1 pound of cream cheese, a half pound of grated white cheddar, half cup of mango chutney, 1 cup chopped rotisserie chicken, chopped scallions and 1 to 3 teaspoons of curry powder or garam masala. The addition of chopped cashews or unsweetened coconut would be fantastic, as would carrot or raisins. Spread thinly over a large tomato flavored tortilla, roll, and repeat, until the cheese mixture is gone. Wrap tightly and chill until needed. Slice into 1 or 2 inch sections, skewer with a toothpick or have toothpicks handy.

Adding Smoked Salmon, Dill and Cucumber

For a nice smoked salmon roll, combine the pound of cream cheese with an 8 ounce log of soft goat cheese. Add in 1 cup of chopped smoked salmon or lox, 1 to 3 tablespoons of chopped fresh dill, 1/2 to 3/4 cup of finely chopped cucumber which has been salted and allowed to drain in a colander for half hour. Mince one or two tablespoons of drained capers and 2 tablespoons chopped scallions and add. Combine well and spread on large spinach flavored flour tortillas and roll, repeating until cheese mixture is gone. Wrap, chill and slice as above.

When in Doubt, add Bacon

One can hardly go wrong with bacon. Adding bacon to a cheese mixture is always great for flavor. To the pound of cream cheese, add in 8 ounces of grated cheddar or mild blue cheese. Fry 6 to 8 ounces of bacon until crisp, drain and chop finely. Add to the cheese mixture with 1 or 2 minced cloves of garlic and one half to one cup of chopped pecans. Spread this mixture over plain flour tortillas, wrap and chill.

Two Dessert Rolls to Satisfy the Sweet Tooth

Combine the pound of cream cheese with a half cup of honey. Honey will soften the cream cheese so be careful before adding more. Add in 1 to 3 teaspoons cinnamon to taste and a cup of chopped walnuts and combine. Additions of raisins or craisins would also be great in this mix. Spread onto plain flour tortillas, roll, wrap and chill as above.

Another dessert roll idea is to mix a sweet chocolate hazelnut spread with the pound of cream cheese, combine with 1 cup chopped hazelnuts and roll in plain flour tortillas. If this mixture becomes too soft, add in some unsweetened cocoa powder for a deeper chocolate color and flavor.

These are only some examples of ways to combine basic ingredients to make simple and quick appetizers for your party, whether for the Super Bowl or other. Think up more wonderful combinations and wow your crowd.

The Delicious And Nutritious Benefits Of Black Beans

Black beans, as with most other beans are a healthy food. They contain 15 grams each of fiber and protein per cup. They are diabetic friendly food because of the complex carbohydrates that slow down the absorption of sugars. They have an impressive amount of phytonutrients that function as antioxidant and anti inflammatory compounds, which help with cardiovascular and colon health.

Cooking Black Beans. To Soak, or Not to Soak.

There is much discussion on whether presoaking is helpful or not. It is said that some of the compounds causing flatulence are washed away by presoaking the beans and discarding the soaking water. On the other hand, there are many nutrients being washed away in the soaking water. Ultimately, it appears the resistant starches that enhance digestion are unchanged, so it is purely your own choice.

Cooking black beans can be done in a pot on the stove or in a pressure cooker. In Guatemala I generally used a pressure cooker, but as I no longer own one, I now cook them on stove top. Check the beans over carefully for little stones, or even tiny clumps of dirt. Wash the beans well, as they are often quite dirty. Place them in a large pot and cover them with water to about 2 inches above the beans. Bring to a boil and lower the heat to maintain a simmer. Do not add in salt or it will toughen the outer skins and increase cooking time. In Guatemala I learned to cook the beans with green onions with their tops, as well as an herb they called Apasote, known better here in the US as Epazote. This herb, which grows like a weed in many places, has a particular and peculiar flavor that I have come to love, and was also claimed to reduce flatulence. I have no idea if this is so, but the flavor the herb imparts is wonderful. Cumin was never used in cooking beans. The use of cumin is a more southwest US flavor, and not used in Guatemalan black beans. It takes about 2 1/2 hours to cook black beans thoroughly. Add salt at the end, about 2 to 3 teaspoons per pound of beans cooked.

How to Eat Black Beans. Let Me Count the Ways.

In Guatemala, black beans were eaten often three times a day. An integral part of the diet, along with rice and freshly made corn tortillas provides complete proteins for a great part of the population. Plain cooked beans with their juices poured over a mound of rice are just delicious. For an extra kick of flavors, fry some chopped onion and minced garlic in olive oil, lard or bacon fat and add to the cooked beans. At this point, another way they are commonly eaten is passed through a food mill, food processor or blender until completely pureed. The thickness of the pureed beans is dependent on the amount of cooking liquid left with the beans. If too thin, the beans can be cooked slowly to reduce the liquid and make them a thicker dish.

A Special Occasion or Party Dish.

In Guatemala, with black beans so prevalent, they are also eaten at parties. Generally for a special occasion, they are taken following the last step above, and put into a large frying pan with some oil or lard and cooked over relatively high heat, stirring constantly with a wooden spoon. The mixture reduces more and more over 15 to 30 minutes, until finally one large mass comes together. This mass can be flipped to one side of the pan or other, remaining in a half moon shape and slid onto a serving plate. This way the beans can easily be eaten warm or room temperature. The Guatemalans call beans made this way, Frijoles Volteados, meaning flipped, as with an omelet. Made this way these beans can be eaten at any time, but with the extra time needed to create the dish, it is often a special occasion fare.

While the beans made this may not look terribly appetizing to an outsider, to one who has eaten them often, they look downright mouth watering. Make some delicious black beans very soon, and enjoy both their delicious flavor and the secure knowledge that they are a nutritional boost to your health.

Other foods that pork hocks are commonly used as seasoning for are beans and peas like navy beans and black-eyed peas. However, be sure to keep the skin and bones attached to the pork hocks because that is where most of its flavor is present. And when it comes to serving the dishes, it is up to a person if they would like to serve the pork along with the vegetables or not, where if it is served as part of the dish, one can remove the pork hocks from the dish using a fork, discard its bone, and then put it back with the dish to be served.

Pork hocks are easy to attain as they can be bought from the butcher shop or meat department of a supermarket in different forms, such as raw or fresh, or smoked or cured. Pork hocks that are cured generally have a longer shelf life which makes storing them or use over a period of time possible. However, because there is not much flavour left from the pork after one round of cooking, it is recommended that it is only used once for cooking.

Staub Or Le Creuset? Which Dutch Oven To Choose?

If you are a Dutch oven fan then you certainly have heard about Staub and Le Creuset. They are both popular manufacturers of cast iron pots and their Dutch ovens are among the best in this category. But, which one to choose? And what are the main differences between the two? I have used both a Staub and a Le Creuset Dutch oven and here is a short overview of the pros and cons of these cast iron pots.

The interior: here is the main difference between the two. Both are enamel cast iron Dutch ovens, but there is a difference in the interior. Le Creuset has a smooth light-colored enamel interior while Staub has a black matte enamel one.

The Staub's black interior can be tricky if you are not used to cooking in a dark pot. First of all it is difficult to see if your food got burned or if fond has developed. Many complain that the black interior makes it difficult to see the color of the food you are cooking in the pot. In my opinion, it takes some time to get used to it, but once you have it won't be a problem anymore. Especially if you sear your food in a separate pan (like many do). Professional chefs use mostly Staub for preparing their recipes, so there must be a reason for that. Le Creuset has a light colored interior that makes it easier to see the food that you are cooking.

As far as the quality of the pot's interior Staub's is much sturdier and somehow is easier to clean. Still, Le Creuset is easy to clean as well but slightly more difficult than Staub.

The Le Creuset interior looks great when it's new but after some use the finish tends to become dull and stained. Some use bleach to restore the original color but I would avoid doing that (the bleach will damage the enamel). A Le Creuset pot will get stained and dingy looking with use and there is not so much you can do. If you are going to be bothered by discolorations of the pot's interior Staub is a better option. Because it's black, you won't notice the staining on the Staub's interior.

Another thing I noticed is that the Staub's cooking surface is slightly rougher than Le Creuset. The Staub Dutch ovens develop a nonstick patina with use because the cooking oils fill the pores of the pot. So, you get a self seasoned pot and the nonstick properties will get better with use. This is not the case with Le Creuset because it has a smoother interior (but food won't stick too much in it either) but this pot won't get better with time like Staub.

The lid: The Staub's lid is heavier and better fitting. Because of the snug fit it retains more moisture than Le Creuset. The Staub's lid has a special feature too, teh so called selfbasting spikes (special dimples underneath the lid that retain moisture form the food). So, there's no need for basting with a Staub pot which makes it ideal for stovetop braising. Od course, because of the spikes it's a little bit more difficult to clean. Le Creuset has some lines with the spikes but most models have a smooth lid.

The exterior: This is a matter of aesthetics. Le Creuset has brighter and bolder colors and a more contemporary design and because of that is ideal for kitchens with a modern decor. Staub, on the other hand is definitely more stylish and elegant because of the high-gloss enamel finish and classic top handle. A pot you will want to carry on the table in special occasions. The colors of the Staub's pots are more neutral (even though they offer a couple of brighter colors too).

The knob: Staub has a brass/nickel knob that is heat resistant up to 500. The Staub lid handle has a nice design that makes it easier to hold, but the knob gets hot so be careful when you are lifting the lid. Le Creuset has a phenolic knob on their standard model and it's oven-safe to 350-400F. You can buy a stainless steel replacement knob that stays cool on stovetops and is oven safe at any temperature. In this regard Le Creuset offers you two options so you can combine the two knobs depending if you use the stove or the oven.

The weight: Le Creuset is easier to maneuver and lift because it has a slightly thinner construction. Staub has a really heavy lid so you will lift a Staub pot easier if you take the cover off.

The price: Both Staub and Le Creuset are not exactly cheap. They stand on the high end of the price range for Dutch ovens. Even though they don't make Dutch ovens that are exactly the same in size, still it seems to me that Staub is cheaper for a few dollars.

Decorating Ideas For Cupcakes With Team Logos As A Super Bowl Dessert

Everyone makes cupcakes. They are so simple to make, and make a great presentation. They can be made in any flavor, decorated or not, and are always a sought after treat. If one has a little artistic ability they can be made elaborately, though this is not a requirement for the enjoyment they bring.

I decided to try out some thoughts and designs, and will pass on my results here. Making cupcakes is as simple as having muffin tins and paper liners. Even the paper liners are not mandatory, though they help make it cleaner to pick up and move. Making a cake mix, either from scratch or from a box and filling muffin papers about half way and baking for slightly less time than a full cake layer is all easy as 1, 2, 3.

Once made, if decorating muffins is a frightening prospect, let that go and just enjoy. A simple smear of icing will make a delightfully edible treat. Actual decorating is really just, well, the icing on the cake. The main idea is to enjoy the process and have treats for guests and family. This year, the team colors are purple, black and metallic gold for the Ravens and red, metallic gold and white for the 49ers. These colors, or some combination, can be used as the main icing color or in combinations. The other color would be green to mimic turf.

Party decorating shops or cake decorating shops will likely have little decorations to use, such as little footballs or goal posts and such. If you choose to take the time to make your own, you might look for a small candy mold in football shapes. Melting chocolate or chocolate bark and filling the molds is quick and easy. Once the halves are chilled and hard, a dab of melted chocolate will glue the halves together. Allow to set and then make the laces down the side with white icing and a small holed icing tip.

Decorate some cupcakes with brightly green tinted icing and either just smear it on or use an icing tip number 233 to mimic grass. Even a small star tip can be used to create a grass effect. Set a little chocolate football onto the grass and there you have it. If you already have small Easter egg molds, these can be used the same way, by just planting the rounded end down onto the green icing grass surface.

I chose to attempt a loose facsimile of the actual logo for the teams. Making a brilliant red frosting for the background field of the 49ers look, I used a flat icing tip number 45 to make a rectangle in an approximate gold color over top. I piped in 49ERS in red using a number 4 round holed tip, then outlined the letters and numbers in white using a number 3 round holed tip. For the Ravens, I frosted the cupcake in deep purple. Using a toothpick, I traced an approximation of the raven logo, and then used black icing and a number 3 round holed tip to copy over that traced outline. The first obvious advantage of induction cookers over gas cookers, halogen hobs and ceramic hobs is that of safety especially important if there are children or elderly users to consider. The induction hob works by using magnetism to heat the pan itself the rings do not heat up consequently the risk of burns from naked flames and hot surfaces is reduced to practically zero. (There is some residual heat when a pan is lifted off but this is nothing like the temperature of a conventional hob).

Still on the subject of safety, even when switched on, an induction ring only starts to work when a suitable metal pan is placed on it, so no worries about a stray spoon left on the hob becoming dangerously hot. Think about the time involved and set yourself a limit of things to get done. The list should also include any cleaning and other housework or party setup time. Think which things can be done while sitting and conserving energy. Create a list for 5 days ahead, 4 days ahead, 3 days ahead, on up to the day of the event. Look over the list. Is it too heavy on any one day? Try to spread the work over the days without too heavy a workload on any one day.

Start With Advance Foods

Anything that can be prepared ahead and frozen is good. Pastries or cakes can often be frozen and thawed with ease. Many foods can be prepared and kept in the refrigerator. Preparing foods that will need to be baked at the last minute can still be assembled ahead and kept in the refrigerator.

Check off your list as you go. Once a task is accomplished, cross it off, or put a check beside it. If something is not finished on the day you hoped, do not panic. See if there is another thing that can be substituted. Stay calm and focused and enjoy the process.
