Wood Burning Oven: From Stone To Refractory Materials

In ancient times the oven was used for cooking all types of food: bread and pizza were the most popular, but also meat and the vegetables were cooked in a wood burning oven. We have found ovens dating back to the Roman era, centuries before the birth of Christ.

In Pompei, near the place where the first pizza margherita was made, there are examples of ovens with characteristics similar to those of today, the only difference being the material of manufacture; naturally occurring stone was placed dry or with wet earth (clay), forming an igloo-shaped hut with a very small opening to insert food. Today, ovens can be made of refractory materials, brick or steel. The stone for the dome has been replaced with higher performance and lighter materials.

Since the appearance of brick, the wood burning oven has changed structure and shape; the igloo has given way to a low vault which facilitates the construction of the oven. In 1889 during the visit of the Queen of Italy, Margherita of Savoy, Raffaele Esposito, a Neapolitan chef, prepared a personalized pizza portraying the colors of the Italian flag: white, red and green, mozzarella, tomato and basil. Thus the pizza margherita was born, still the most common food in the world. In the 70s the oven changed again: the brick oven gave way to the oven made of refractory material. The refractory oven has the great advantages of thermal efficiency and heat retention compared to the brick oven. It may be composed of multiple parts that need to be assembled or of a monoblock. The thickness of the refractory oven varies depending on the needs.

The greater the thickness, the greater the thermal resistance. The refractory oven is a mix of silico-aluminous materials which together give the best results for perfect cooking. At this time, domes made of refractory materials are being studied, lighter and therefore faster in heating the oven. The refractory oven has changed the method of installation of the oven. Composed of prefabricated parts, it is simple and easy to install even for inexperienced users.

This type of oven works best after some careful considerations : the floor which supports it must be at a height that will allow the operator to work comfortably with the floor of the oven; secondly, it is first necessary to install the floor and then continue with the dome and thirdly, it must be insulated with ceramic fiber and mortar for optimum thermal efficiency of the oven. In fact, the thicker the insulation layer is, the longer the heat stays in the oven.

On the contrary, with thin insulation, the oven would cool down immediately. The refractory wood burning oven can be covered with a dome (classic Neapolitan oven) or built into the wall.

Five Good Reasons To Bake Cakes From Scratch

I started baking cakes from scratch at age 21, recently married, in a foreign country. I admit, necessity was the mother of invention, in my case. That was a very long time ago, and even when I returned to this country I continued to make my own cakes from scratch because they are just better, in every way. I offer five good reasons why one should leave the grocery shelf options and discover the realm of possibilities when one takes that leap of faith.

1. The Ease

Anyone who believes it is too difficult, or that it takes too much time to make a cake from scratch has either never tried, or just gives up too easily. Really, it takes barely more time to make a cake from scratch than it does to open a box, get out a bowl and spoon, get an egg or two, milk, oil and whatever else the box calls for. Then measuring cups or spoons for the liquids and mixing. Grease the pan or pans. Set the oven temperature and bake. I ask you, what is the difference? To make a cake from scratch, you get out a bowl and spoon. Set out the flour, sugar, butter, eggs, milk. Measure the ingredients. Mix and bake. There is not a lot of difference. The one, and possibly only difference, is the need to cream the butter and sugar. While a recipe may intimidate by declaring that improper creaming of ingredients will yield a cake that is too crumbly, too dry, or uneven, I have never had these problems, even when at age 21 my one utensil was a spoon. These days most people own at least a small electric hand mixer, making it all simpler.

2. The Flavor

Flavors of cakes may be varied in many ways. Obviously, the addition of cocoa or chocolate will yield a chocolate cake. So many other options exist, and some are so simple. There are so many flavorings on the market these days that did not exist for the home baker even 10 years ago. Using orange or lemon juice or zest will yield a lovely citrus flavor. But all these flavoring possibilities aside, the flavor of a cake made from scratch is so much richer that anything from a box. Even a plain vanilla cake is exalted when made from a good recipe with loving care. To me, there is nothing plain about vanilla flavor, either. We have such access to great quality vanilla, vanilla beans and even vanilla paste these days, making plain vanilla a complete misnomer. Have you ever has a vanilla bean go so dry you cannot scrape the seeds out of it? I had that happen recently, so I broke the bean into pieces and placed it into a small grinder and made powder out of the entire bean. I strained out any larger bits, and now use a pinch of the powder in cake or icing with mouth watering results.

3. The Texture

Having made cakes from scratch since so long ago, cakes made from a box mix have no texture at all. They remind me of plain white sandwich bread. Press down and all you have is air. Light and fluffy they may be, but there is no substance at all. A cake made from scratch has some texture. There is something to chew on. There are ways to make a cake softer, such as using cake flour, but even back when I started out with just plain all purpose flour, my cakes were always exclaimed over. There is a certain amount of science involved in making cakes, but that should not stop one from trying.

4. The Diversity

There are so many types and styles of cake recipes to choose from. I am not talking about the flavors, but the diversity of cakes to make. There are simple cakes, mixed from the standard flour, butter, sugar, eggs, milk and flavor. How about a coffee cake, pound cake, upside down cake, chiffon cake or angel food? There are all sorts of cakes, like pannetone or Sally Lunn that are less well-known but equally good in different ways. The ingredients are the same basic ones, but used a slightly different way and with a totally new result.

5. Well-Being

Whenever one makes something from scratch, there is a rewarding sense of well-being. There is the feeling of pride in accomplishment and the knowledge that what youve made is free from preservatives and additives. You have the ability to present the family with something that you know is better for them. Find your sense of pride and accomplishment. Make a cake.

10 Reasons To Choose Glass Splashbacks For Your Kitchen

Glass splashbacks for kitchens offer many advantages, but for a quick breakdown of the key reasons why people choose glass kitchen splashbacks over the many alternative materials available, here are 10 key benefits.

First of all there's the installation. Because glass splashbacks are manufactured either in one piece or in large sections, with screw holes predrilled, and the sections of glass attached to the wall using a secure bonding agent, they are incredibly quick and easy to install into your kitchen. There is no messing about with grout, no trying to keep lengthy lines of tiles even, and no cutting and chipping away to try to work your way around pipes or sockets.

The second advantage is durability. Splashbacks are made from toughened glass, and this material is incredibly resilient. After all, toughened glass is used for things such as the door on your oven, and many popular casserole dishes, not to mention chopping boards. Glass can withstand knocks, bangs, scrapes, acidic juices, sharp knives and the daily onslaught typically thrown at the average family kitchen.

Thirdly there is the fact that glass splashbacks can be crafted in an astonishing range of colours. In fact in many cases you can use the same sort of colour chart as you do in any good quality graphics program on a computer, choosing exactly the colour you want, rather than a close approximation. This means that you can choose your splashback colour to either match existing decorations within the kitchen, or simply to reflect who you are.

The fourth benefit of glass as a material for kitchen splashbacks is that they can often be produced to include LED lighting for a truly outstanding effect. Glass worktops can also be made in this way, and with a frosted finish to the glass the LED lights create a diffused lighting effect that looks strikingly modern and sophisticated.

Fifthly we should mention cleaning. Glass is incredibly simple and easy to clean. After all, cleaning your windows doesn't take very long, simply requiring a quick spray and wipe. No matter how enthusiastic your cooking techniques might be, when it comes to cleaning up afterwards all that is necessary is to give your splashbacks a quick spray and wipe, and they are back to their former glory in seconds.

Advantage number six is to do with hygiene. No matter how visibly clean your kitchen may be, microbes, bacteria and mildew can accumulate, hide and breed in even the smallest cavity. The edges of tiles, and the grouting, offer many opportunities for bacteria to escape your cleaning. But glass offers such a smooth surface, and such an even one, that mould and bacteria are simply not interested. This means that a glass kitchen splashback helps to keep your family safer and healthier.

The seventh benefit is the sheer versatility of glass as a material for kitchen splashbacks. It can be moulded and cut to almost any shape, integrating holes for sockets and pipes, raised cooling racks and even integrated bowls. It can be curved, straight, and made to measure easily. This is why it is often used not only for kitchen splashbacks, but also for bathrooms, receptions and many other locations where versatility and style are important.

Benefit number eight relates to the way in which coloured glass splashbacks can help to transform your kitchen incredibly quickly and easily. Because they can be manufactured in bold colours, and quickly cover a large area of space, it is possible to completely change the look and feel of the entire room in a very short space of time.

Nine is the fact that toughened glass is extremely resistant to heat. This is important, because many tiles popularly used as splashbacks actually offer a very low resistance to heat, and grout even less, which means that over time weaknesses can occur, damage can occur, and as well as looking unsightly this also represents a hygiene risk. The glass used in splashbacks is able to cope with temperatures up to 400C, which is hotter than the melting temperature of lead!

Finally we come to one of the most obvious features of coloured splashbacks. Whereas tiles and other opaque surfaces absorb light and reflect very little, glass reflects and refracts light in a way which imbues the entire room with a soft coloured glow which creates an amazing atmosphere, bringing your kitchen alive with light and colour.

First of all , you should learn 's what the various terminology you will find in recipes actually means. There are many new and often foreign sounding terms that you will find in common recipes. These terms often means the main difference in recipe success or failure. You should be able to find an excellent section in any inclusive cookbook that explains different definitions for unfamiliar terminology. In the event you aren't absolutely certain what exactly is meant by "folding in the eggs" it really is in your needs to look it up.

Another great little bit of advice with regards to cooking basics is always to try simpler recipes for a while then expand your horizons up to the more complex recipes that abound. Most recipes may have somewhat note about their degree of difficulty and you will read the recipe to determine if it is something you are interested in preparing or certain that it is possible to prepare. Remember Rome wasn't built in per day and will also take some time now to create a trusted 'repertoire' of recipes to operate into your meal planning rotation.

The good thing is that when you've learned the fundamentals of cooking it is unlikely that you will ever have to relearn them. Which means you can constantly build up and expand your cooking skills. While you learn new recipes and enhance your culinary skills and talents you'll discover that preparing your personal meals over completely from scratch is much more rewarding than preparing prepackaged meals that are purchased from your shelves of the local supermarkets.

Additionally, you will discover since your experience and confidence grows that you will find yourself more and more often improvising when you go and adjusting recipes to fulfill your individual preferences. Should you prefer more or less of ingredients or want to make a recipe a bit more or less spicy in flavor you possibly can make simple adjustments along the way to have this goal. Therefore will start in time to produce recipes of one's own. And that's something you will not necessarily learn in terms of basic cooking skills for novices nevertheless, you would not learn in the event you didn't master those basic cooking skills.

Abc Of Soup Making

Lean, juicy beef, mutton, and veal, form the basis of all good soups; therefore it is advisable to procure those pieces which afford the richest succulence, and such as are fresh-killed. Stale meat renders them bad, and fat is not so well adapted for making them. The principal art in composing good rich soup, is so to proportion the several ingredients that the flavour of one shall not predominate over another, and that all the articles of which it is composed, shall form an agreeable whole. To accomplish this, care must be taken that the roots and herbs are perfectly well cleaned, and that the water is proportioned to the quantity of meat and other ingredients. Generally a quart of water may be allowed to a pound of meat for soups, and half the quantity for gravies. In making soups or gravies, gentle stewing or simmering is incomparably the best. It may be remarked, however, that a really good soup can never be made but in a well-closed vessel, although, perhaps, greater wholesomeness is obtained by an occasional exposure to the air. Soups will, in general, take from three to six hours doing, and are much better prepared the day before they are wanted. When the soup is cold, the fat may be much more easily and completely removed; and when it is poured off, care must be taken not to disturb the settlings at the bottom of the vessel, which are so fine that they will escape through a sieve. A tamis is the best strainer, and if the soup is strained while it is hot, let the tamis or cloth be previously soaked in cold water. Clear soups must be perfectly transparent, and thickened soups about the consistence of cream. To thicken and give body to soups and gravies, potato-mucilage, arrow-root, bread-raspings, isinglass, flour and butter, barley, rice, or oatmeal, in a little water rubbed well together, are used. A piece of boiled beef pounded to a pulp, with a bit of butter and flour, and rubbed through a sieve, and gradually incorporated with the soup, will be found an excellent addition. When the soup appears to be too thin or too weak , the cover of the boiler should be taken off, and the contents allowed to boil till some of the watery parts have evaporated; or some of the thickening materials, above mentioned, should be added. When soups and gravies are kept from day to day in hot weather, they should be warmed up every day, and put into fresh scalded pans or tureens, and placed in a cool cellar. In temperate weather, every other day may be sufficient.

Various herbs and vegetables are required for the purpose of making soups and gravies. Of these the principal are, Scotch barley, pearl barley, wheat flour, oatmeal, bread-raspings, pease, beans, rice, vermicelli, macaroni, isinglass, potato-mucilage, mushroom or mushroom ketchup, champignons, parsnips, carrots, beetroot, turnips, garlic, shalots and onions. Sliced onions, fried with butter and flour till they are browned, and then rubbed through a sieve, are excellent to heighten the colour and flavour of brown soups and sauces, and form the basis of many of the fine relishes furnished by the cook. The older and drier the onion, the stronger will be its flavour. Leeks, cucumber, or burnet vinegar; celery or celery-seed pounded. The latter, though equally strong, does not impart the delicate sweetness of the fresh vegetable; and when used as a substitute, its flavour should be corrected by the addition of a bit of sugar. Cress-seed, parsley, common thyme, lemon thyme, orange thyme, knotted marjoram, sage, mint, winter savoury, and basil. As fresh green basil is seldom to be procured, and its fine flavour is soon lost, the best way of preserving the extract is by pouring wine on the fresh leaves.

For the seasoning of soups, bay-leaves, tomato, tarragon, chervil, burnet, allspice, cinnamon, ginger, nutmeg, clove, mace, black and white pepper, essence of anchovy, lemon-peel, and juice, and Seville orange-juice, are all taken. The latter imparts a finer flavour than the lemon, and the acid is much milder. These materials, with wine, mushroom ketchup, Harvey's sauce, tomato sauce, combined in various proportions, are, with other ingredients, manipulated into an almost endless variety of excellent soups and gravies. Soups, which are intended to constitute the principal part of a meal, certainly ought not to be flavoured like sauces, which are only designed to give a relish to some particular dish.

The end result is a durable and natural finish that is stain-resistant, but will develop a fine patina over time.

The Different Fuel Types Of A Rangemaster Cooker

Are you building a house and getting to the exciting part when it comes to picking out the ranges and appliances for the kitchen? Maybe you are in the earlier stages of planning and get to choose what type of fuel source you cooker or oven will run off. You might not always have a choice, depending on where you will live, but when you do have a choice, there are a few things to consider before you choose which fuel source to go with for your house, and cooking needs. It is best to decide first what fuel you wish your Rangemaster cooker to run off; do you need gas, LPG, or simple all electric?

A Rangemaster cooker is a flexible appliance to have in the house. The cook stoves can be efficient, modern looking, very large or even medium in size. It all depends on how much you like to cook and how often you are in the kitchen. But wait and consider what you need for your kitchen in a new family house or small cottage. Does the Rangemaster cooker have to be powered with natural gas? Is propane the only source used in your remote area? Are you only able to get electricity to run a Rangemaster cooker for you home? How do you know what style is best?

Depending on who you ask, you will get lots of different opinions on what is the best type of heat source for an oven. The LPG models some people love, whereas others only like to work with natural gas. What might be the deciding factor in your Rangemaster cooker source is what it will cost you in your area to run the appliance. LPG gas can be very expensive during the winter months, especially if you would need to get it trucked in. Natural gas might be more cost effective if it is used a lot in your location. However, gas lines don't often run in to rural areas, meaning a Rangemaster cooker would need to be electric or LPG powered.

Natural gas Rangemaster cookers will provide even heat, whether it is for the burners on the top or the oven cavity in between. It is a steady supply from the source, whereas you never need to worry about monitoring how much is left or when you could potentially run out.

LPG powered Rangemaster cookers will also provide a steady heat, as long as the tank remains full outside. Checking the tank to make sure it isn't empty needs to happen regularly, especially during colder months when there is heavy use by other appliances on it.

If you are in luck, then you can pick a dual fuel Rangemaster cooker model for your kitchen. That way you get the best of both worlds, either source will power the oven that you want to cook with. If neither gas source is available, then a Rangemaster cooker that is controlled by electricity is an option for your kitchen. Electricity doesn't heat up as evenly as gas sources some people claim, but it is a steady source for the Rangemaster cooker you have.

Silicone Cookware Utensils - A Great Choice For Your Kitchen

Silicone cooking utensils are becoming more and more popular these days. I was in my favorite gourmet cookware store and they had a pretty good display of silicone cookware and utensils.

It just so happens that I was looking to replace an old basting brush that I had. I have never had any luck with basting brushes no matter what they were made of. I have used natural bristle brushes and nylon, they never seem to hold up well or last very long.

I decided to pick up a silicone basting brush while I was there. One of the advantages that I immediately picked up on about this cooking utensil is it appeared to be quite flexible and there is no need to worry about bristles shedding or fraying. Also they work well with non-stick cookware because they are soft and flexible and will not damage the non-stick surface. They will work well with traditional cookware sets also.

The next day I threw some ribs on the grill and decided to try out this new silicone brush. Well let me tell you, this basting brush really worked well. It held the BBQ sauce that I was using to baste the ribs better than any other traditional brush I have ever used. It is also dishwasher safe and cleaned up well in the dishwasher.

This gourmet cookware store also had a pretty good selection of silicon
bakeware and other cookware. Now I don't know if this type of cookware is right for all kitchen uses but it is definitely worth looking at and evaluating it on a case by case basis.

Since I was pleased at the way this simple basting brush worked I will definitly be looking at other silicone utensils like spatulas spoons and other cookware.

What I have learned about silicone cookware is that it is not totally a non stick cookware. Some manufacturers of this type of cookware and bakeware still recommend that you grease or lightly flour it before using it.

Some advantages of silicon cookware, bakware and utensils are that they are stain resistent, dishwasher safe, will not retain odors or flavors and cools down quickly.

Borage, A Lesser Known Herb To Know And Enjoy

The common thread running through historical descriptions of borage is its ability to make men and women glad and merry, to comfort the heart, dispel melancholy and give courage. These noble qualities may derive from its high content of calcium, potassium and mineral salts, and research suggests that borage works on the adrenal gland, where courage begins. In all the countries bordering the Mediterranean, where it is plentiful, it is spelled with two r s so the word may be derived from the Italian borra, or French bourra, signifying hair or wool, words which in their turn are derived from the Low Latin burra, a flock of wool, in reference to the thick covering of short hairs which clothe the whole plant.

Borage is an annual self seeding plant, borago officinalis, that bears many leafy, branched, hollow succulent stems covered with stiff white hairs. Its sprawling habit makes it difficult to contain as a decorative plant, but its delightful blue, star shaped flowers with their cone of prominent black anthers, are about 3/4 inch in diameter, and are certainly a decorative element. The whole plant looks grayish green, due to the hairs on every surface. Borage is native to Europe, Asia Minor, northern Europe and Africa and naturalized in Great Britain. It is widely cultivated in North America. Its habitat is sunny locations, including waste places and along roadsides. Borage attracts bees and wasps, so try to keep plants away from walking paths.

One of the ways in which borage brings joy is as a flavoring in foods. It has a crisp cucumber flavor. The leaves can be eaten raw, steamed or sauteed like spinach. The stems are also edible. Peel, chop and use them like celery. Fresh borage flowers can be tossed into salads or used as a garnish. They will turn pink on contact with vinegar or lemon juice. Candied, they make lovely decorations for pastries and dessert trays. The leaves and stems enhance cheese, fish, poultry, most vegetables, green salads, iced beverages, pickles and salad dressings. They blend well with dill, mint and garlic. If the fuzziness of the leaves is an objection, they can be used strictly for flavor, and then removed before serving. Borage loses all flavor when dried or frozen. It may be used to flavor vinegar.

Other culinary uses: heighten the flavor of cold cucumber soup, or other chilled vegetable soups. Add about 2 tablespoons of minced fresh borage to four cups of soup, and use the flowers as garnish. Add a handful of leaves and stems when making a chicken or fish stock. Make a strong tea by boiling the leaves and stems in water. Use the tea to replace some of the water in a recipe for lemon or strawberry fruit ice.

This wonderful herb can be grown in your own backyard. Its rough, unrefined sprawling habit makes it unacceptable for formal garden settings, though it suits an herb garden well, as it blends nicely with other wildflower type plants. It grows to about 2 1/2 feet and easily topples over. It can be added to your vegetable patch, as it is said to strengthen neighboring plants resistance to disease. It is an especially good companion for strawberries, as the two plants seem to be mutually beneficial. Try to keep borage as the junior partner in that arrangement.

Borage is easily grown from seed, as soon as any danger from frost is past. Seeds can be viable for up to eight years. Once seedlings appear, they should be thinned to a distance of about 2 feet apart. It occupies a lot of space, once established. The long taproot makes it difficult to transplant, once it grows beyond a seedling. It readily reseeds itself, coming back up year after year in the same spot. It will do well in most any garden soil, but for optimum growth, maintain a fairly rich soil, loose and aerated. Keep the soil moist, easily accomplished by mulching. It can be grown indoors if provided with a sunny spot and a container large enough to hold the roots without crowding.

In old medicinal texts, it is said that a borage poultice soothes inflammation and bruises. Research suggests the presence of gamma linoleic acid in the seeds, much like evening primrose.

1) Chicken Tortillas

Acquire chicken that's already ready for stir frying or satay from your local chicken supplier such as Leonards, saving a lot of time. Whilst there buy a packet of tortillas, a lettuce, tomato and cheese if you have none at home.

Preparation consists of heating up a pan and putting in the chicken. Although the chicken is cooking, rapidly chop up the lettuce and tomato and heat the tortillas in the microwave for thirty seconds. Set out the dinner table with the lettuce etc. Now the chicken will probably be prepared. Location it in a bowl and serve it on the table by the side of the compliments. Enable the family to create up their own tortillas - helping out younger children under 5. I do it this way - lay a tortillas on the plate and put a line of hot chicken down. Next I add the cheese to ensure that it is going to melt. And lastly the lettuce and tomato. Fold up the bottom of the tortillas and then roll up - eat and enjoy. Cleaning up afterwards is minimal as you've got only utilized 1 frying pan along with a few plates.

2) Haystacks

Comparable concept, but as opposed to tortillas and chicken you'll be making use of beans, nachos and sour cream. As soon as once more you need the salad ingredients of lettuce and tomato, and cheese ( preferably half morzarella).

Buy a can of your favorite Mexican chili beans. Heat in a pot.

Get a huge pizza dish and lay them a bed of nachos chips. Next sprinkle on the cheese, should you use mozzarella then it is going to melt better under the grill. Place under a grill. When cheese is melted (and prior to the nachos burn) eliminate. You serve out the nachos and cheese, put on the hot beans, and then tomato, lettuce, and/or sour cream as the individual likes. (you are able to skip the lettuce if you want). Tastes great.

Clean up - serving plates, one pot and one pizza dish.

3) Baked Bean Buns

This recipe is even simpler still. Cut a Hamburger bun in half. Cook a can of baked beans in a pot on the stove. When hot spoon beans onto the bun, put cheese on top - location under griller. EatClean up - one pot, serving plates. Tip, line the grill tray with foil to save the cleaning up of melted cheese from the grill pan.

These meals are simple to create and taste fantastic. In case you are searching for a low calorie option, use low fat cheese.

Suggestions On How To Make Use Of Your Vacuum Food Sealer

In my opinion, Vacuum Food Sealers are the greatest thing since sliced bread. Even though some may have a hefty price tag, the money you will save in food cost and vehicle gas savings alone will make up for the initial investment. Food sealers may be used for dry goods, frozen or refrigerated foods all with equivalent success. Our freezer is worth a fortune in the fall after harvesting the garden, as well as throughout the rest of the year after we have purchased our 1/4 Black Angus beef and a 1/2 pig, both all sliced up to the perfect cuts and vacuum packed in the freezer. The storage life will dramatically increase when the air has been removed from the product properly and completely sealed and put into the freezer.

In view of the fact that there are so many different models and levels of vacuum food sealers, do your research first and decide which will be the best model for you. They range from just a bag sealer, which only seals the bag without removing air, all the way up to a commercial grade sealer that allows you to vacuum bags without having to wait for the sealer to cool down as much.

Here are some ideas that I consider are relatively significant when vacuum sealing foods.

1. Nothing is worse than having say ten pounds of beef and only enough material for eight of those ten pounds, so make certain you have plenty of material, either bags or rolls when you begin a project.

2. If you have a regular type vacuum sealer, don't make a production line out of the process. In other words, do not bag everything up and then seal them all up one right after the other. Your vacuum sealer will heat up and possibly shut off for a period of time before letting you continue. As an alternative, fill one bag, clean the inside sealing portion of the bag and seal it up before moving on to the next bag. A good quality commercial grade vacuum sealer will allow you to seal numerous bags at a time, however, they are rather expensive.

3. Make certain you leave ample room above the food in the bag when sealing. About three inches is just fine and gives you plenty of room to work with the food and the bag at the same time.

4. When possible, always purchase bags by the roll. This way you have total control of how large you would like the bags to be. If you purchase gallon size bags, which typically are 20 or more bags to the box, you may be sealing more food in one bag then what you would eat at one setting. With the rolls you can make the bags the ideal size for your meals. If you are a single person or cooking for an entire family, make the bags your size.

5. Liquids in your food. This can cause quite a mess when vacuum sealing. There are a number of techniques you can choose so that you don't ruin your machine as a result of sucking the juice into the sealer. If you use a marinade, try a dry or wet rub as an alternative previous to packing. Dry rubs are all the rage today when cooking on the grill. If there is juice in the foods, like fruits for example or after cooking down the squash, bag it and put it into the freezer for a few hours until the liquids are frozen, then vacuum seal the bag.

6. Here is a neat trick for freezing soups. Freeze them first in plastic microwaveable bowls, then run them under running hot water to pop them out of the bowl, put into freezer bag and seal. Instant soup for later.

7. Various foods, (like hamburgers, baked goods, etc.), are a little difficult to vacuum seal since the sealer may be too strong for the food and squish it making it kind of unappetizing to cook. As I said previously, do your homework first when buying your machine. There are sealers that have settings so that less air is pulled out or the machine senses when it needs to stop so that foods do not get squashed. Or, shape them and freeze them first previous to bagging and sealing.

8. When you will be opening and resealing the bag, make certain first of all that you make the bag lengthy enough to be able to reseal it with ample room. That is the reason I employ the three inch rule above. When you open the bag, cut it right at the seal, take out what you need, then reseal the bag and place back into the freezer.

9. Most bag materials can stand the test of repeated sealing as long as you follow this simple measure: Wash the bag with hot water, simply turn the bag inside out and put on top rack of your dishwasher or clean it under running hot water right in the kitchen sink and make sure the bag is dry before using again. The exception is with raw meats, just throw the bag away, this reduces the possibility of cross contamination.

10. Last but not least, read the directions that came with your vacuum sealing machine. I know, most people will not read the instructions, but at least browse over them just to get familiar with your machine to prevent any messes while using. Keep in mind, using your machine incorrectly will cause troubles in the future and messes at the present.
